This module covers the composition and structure as well as chemical and physical properties of oils and fats. It will also cover important minor constituents of oils and fats. The significance of some specifications will be discussed.

Overview of Oil Extraction

In this overview mechanical and solvent extraction methods for various oils and fats will be explained. This will provide participants with a better understanding of the various methods used in industry and their respective advantages and disadvantages. This knowledge will be useful in the production and quality control of oils and fats.

PO Milling and PK Crushing

This module focusses on palm oil milling covering the extraction of crude palm oil, the treatment of POME (palm oil mill effluent) and the associated biomass. The module will also include information on the extraction of oil from palm kernels from the mill.

Refining of Oils and Fats

The refining of the major oils will be covered. Process will include degumming, neutralization, bleaching and deodorisation of crude vegetable oils. The management of process contaminants will also be delved into. For palm oil and palm kernel oil, chemical and physical refining will be compared.

The Global Oils and Fats Market

This is an introduction to the global oils and fats market. It will cover the demand for vegetable oils and fats, how the supply of oil crops has responded and how to understand the pricing of vegetable oils.

Modification of Oils and Fats

This module will cover various processes used to modify the physical and chemical properties of oils and fats to improve their usefulness in different applications. These processes include hydrogenation, interesterification, fractionation, and blending.

Fatty Acids and Glycerine

In this module the splitting of oils and fats to produce fatty acids and glycerine will be explained. The distillation and fractionation of fatty acids as well as the refining of glycerine will be covered. Soap making and some other important applications will be included.

Fatty Alcohols and their Derivatives

An important application of oleochemicals is in surfactants. This module starts with the production of fatty alcohols, leading to its subsequent ethoxylation and/or sulphation and final applications.
