Food security is one of the grand challenges we face today because the global demand for basic food and healthier food are rapidly increasing owing to exponential population growth and expanding world economy. In this research cluster, our goals are two-fold: to develop innovative food processes which are more efficient and sustainable, and to develop food products which are safe, healthy and functional. We specialize in the areas of oils and fats processing (see MIPO page), emulsion technologies including solid-stabilized emulsion systems, food encapsulation and controlled-delivery technologies.
